Creamy white sauce on the inside and topped with green chile verde these Chicken Enchiladas are a flavor explosion! Another unexpected twist, they're easy to make!!!

1 large onion, thinly sliced (1 cup) plus 1 small onion, chopped (1/4 cup) - divided
2 c chicken, cooked and chopped
1/2 c died roasted red bell pepper
6 oz cream cheese, cubed
1/4 tsp salt
1/4 tsp pepper
3 (4.5 oz) cans diced green chiles
2 garlic cloves, minced
2 tsp dried oregao
1 tsp ground cumin
1/2 tsp sugar
1 (14.5 oz) can chicken broth
10 (7 inch) flour tortillas
4 c shredded cheddar cheese (16 oz block if you're purchasing it not pre-shredded)
