1 tablespoon olive oil
24-36 ounces boneless skinless chicken breasts, cut into 1-2 inch strips
4 sweet bell peppers, various colors sliced
1 small onion, sliced
1 envelope taco seasoning
1 cup sour cream
4 ounces cream cheese, softened
8 ounces cheddar cheese, shredded
cooked rice
