These avocado halves are filled with a tasty mixture of chicken, corn and mushrooms. They are perfect for a quick appetizer!
1 large avocado
1 teaspoon lime juice
? cup cooked and shredded chicken breast
2 tablespoons unsalted butter
8 cremini mushrooms, sliced
½ teaspoon paprika powder
salt and pepper, to taste
2 tablespoons heavy cream
2 tablespoons corn
1 tablespoon chives, chopped (plus a bit more for garnish)
2 tablespoons blue cheese, crumbled
1 teaspoon lime juice
