Chicken:
6 large boneless, skinless chicken breast halves
3/4 tsp salt, divided
1/4 tsp pepper, divided
4 Tbsp butter, divided
12 ounces mushrooms, finely chopped
1/2 cup onion, finely chopped
2 Tbsp port wine, optional
1 tsp dried thyme
1 17 1/4 ounce package (17 1/4 ounce) (17 1/4 ounce) frozen puff pastry, thawed
1 large egg, separated
1 Tbsp Dijon mustard
1 tsp milk
