Chicken with Mushrooms and Pak Choi

This stir fry dish is quick, easy and delicious. I always make a stir fry when I have a few vegetables in my fridge left over. I added Pak Choi to this dish at the very end of cooking for extra flavour.

500g chicken fillets chopped
400g mushrooms sliced
400g Pak Choi
1 tbsp. garlic and ginger paste
1 large onion sliced
3 spring onions sliced
1 tbsp. vegetable oil
2 tbsp. soya sauce
2 tbsp. mirin rice wine sauce
½ cup of water
Salt & pepper
Heat up a large wok with the vegetable oil. Once heated add the onions and garlic and ginger paste and stir fry for 5 minutes. Add the chicken with a little salt & pepper and stir fry until nearly cooked....
