Chinese Eight Treasure Vegetables

This dish uses eight vegetables of different tastes and textures, thus it is very rich in flavor, though skinny as well! It is also a festival feast treat, because some valuable vegetables are used, and in Chinese culture, a collection of things in eight varieties means “eight treasures” which is a symbol of good fortune.

2 heads king trumpet mushroom (about 5 oz.)
2 oz. Shimeji mushroom
8 oz. fresh black agaric (or 3/4 oz. dried and soaked in cool water for at least 3 hours)
2 oz. fresh bamboo shoot (or 1/2 oz. dried and soaked in cool water for at least 3 hours)
4 oz. carrot
6 oz. Chinese celery
2 oz. fresh board bean
2 oz. green round pepper
(The above are the eight treasures)
1/4 oz. ginger
1 1/2 T. vegetable oil
2 tsp. salt
1 tsp. sugar
1 tsp. cornstarch
10 Chinese peppers
