Chorizo Spaghetti

This is a very tasty dish my whole family loves. It is simple, but the chorizo gives a depth of flavor to the sauce.
4
1/2 lb. spaghetti
water (to cook pasta)
salt for the pasta water
2 tbsp. olive oil
1 Spanish chorizo (peeled, quartered, and diced)
1 medium onion (chopped)
3 cloves of garlic (finely minced)
1/4 cup white wine
2 cups of your favorite jarred spaghetti sauce (I used Ragu traditional)
Parmesan cheese (optional)

2 tbsp. olive oil
1 Spanish chorizo (peeled, quartered, and diced)
1 medium onion (chopped)
3 cloves of garlic (finely minced)
1/4 cup white wine
2 cups of your favorite jarred spaghetti sauce (I used Ragu traditional)
Parmesan cheese (optional)
1. Fill a pot with enough water to cook the spaghetti. Bring to a boil, add some salt and the spaghetti. Cook for about 11 minutes or until al dente.
2. While the pasta cooks, add about 2 tbsp. of olive oil to another pan and begin browning the chorizo over medium heat (about a minute or two). Next, add the chopped onion, stir, and cook until onion is soft.
3. Add the minced garlic, and allow it to cook for about one minute. Then add the white wine to deglaze the pan and allow it to reduce.
4. Next, add the jarred spaghetti sauce. Cook on medium heat for another minute, then lower the heat to low to simmer for 5 more minutes.
5. Drain the spaghetti and add it to the chorizo sauce. Mix to coat the pasta with the sauce and serve. Add some parmesan cheese and enjoy.
