Here\\\'s an easy recipe for Green Cheese Enchiladas for Cinco de Mayo or whenever you\\\'re craving Mexican food. Growing up in El Paso, Texas (where they have some of the BEST Mexican food you\\\'ll ever taste!), we ate things like this on a regular basis. Anytime any of my friends who no longer live there (like me!) visit El Paso, they always post the restaurants they visit and the food they eat. The rest of us get so jealous! :) This easy recipe uses canned tomatoes and green chile

2 tsp. oil
3 small cans chopped green chiles (14-oz. total)
1 large chopped onion
1 can diced tomatoes
1/2 tsp. cumin
3/4 tsp. minced dried garlic (or 3 garlic cloves, minced)
1/2 tsp. instant chicken broth
1/2 cup water
1 dozen 6-inch corn tortillas
1 lb. Monterrey Jack cheese, cut into 12 equal strips
1/2 cup (in addition to above) shredded Monterrey Jack cheese
3 small cans chopped green chiles (14-oz. total)
1 large chopped onion
1 can diced tomatoes
1/2 tsp. cumin
3/4 tsp. minced dried garlic (or 3 garlic cloves, minced)
1/2 tsp. instant chicken broth
1/2 cup water
1 dozen 6-inch corn tortillas
1 lb. Monterrey Jack cheese, cut into 12 equal strips

Preheat oven to 350 degrees F.
