Cinnamon Crepe with cream cheese filling

Its not as hard as people think to make crepes. So light and delicious, perfect for breakfast or dessert!

For the crepe:
2 1/2 cups flour
2 2/3 cups milk
2 eggs (cold)
3 tablespoons white sugar
2 tablespoons baking powder
Pinch of baking soda
1 1/2 teaspoon salt
1 tablespoon cinnamon (you can make more depending on your taste)
6 tablespoons vegetable oil
1 1/5 teaspoon vanilla
For cream cheese filling:
1/2 cup of butter, softened
1/2 cup of cream cheese, softened
2 cups powdered sugar
1 teaspoon vanilla extract
2 1/2 cups flour
2 2/3 cups milk
2 eggs (cold)

2 tablespoons baking powder

1 1/2 teaspoon salt
1 tablespoon cinnamon (you can make more depending on your taste)

For cream cheese filling:
1/2 cup of butter, softened
1/2 cup of cream cheese, softened
2 cups powdered sugar
1 teaspoon vanilla extract
1- Add all the dry ingredients in a bowl
2- Add the eggs, vegetable oil, vanilla extract and milk in another bowl. Mix well.
3- Add wet ingredients to dry ingredients and mix until it becomes a batter. (More runny than thick)
Heat a pan, put oil on a napkin and brush pan with it.
Ladle on batter, moving pan to let the batter spread thin and across the pan.
Leave for 1-2 minutes, then flip carefully to the other side.
To make cream cheese filling:
Cream the powdered sugar and the butter.
Add the cream cheese and vanilla extract.
You can add a sprinkle of cinnamon on top of the crepe, as well as crumbled corn flakes, walnuts or bananas.
