Cinnamon Vanilla Almond Butter

A cinnamon sweetened almond butter that surprisingly contains no sugar!

3 cups raw almonds
2 tablespoons ground cinnamon
1/2-1 tablespoon pure vanilla extract
1 teaspoon sea salt or to taste
Ground raw almonds in a high-speed food processor until they begin to turn to a butter-like consistency. This will take about 10-15 mins. I put my food processor on high and then go about my business in the kitchen, stopping the food processor every couple of minutes to break up any hard clumps that have formed. Add cinnamon, vanilla and salt. Continue to process until your almond butter has reached desired consistency. I like my almond butter drippy, so I process it for about 20-30 mins. Adjust seasonings to taste and enjoy!
