The best Dutch Apple Pie I\\\'ve ever eaten!

Crust:
2 cups all-purpose flour
1 cup brown sugar, packed
¾ cup butter, melted
½ cup quick oats
Filling:
3/4 cup white sugar
3 1/2 tablespoons cornstarch
1 1/3 cups cold water
1/2 tsp cinnamon
4 medium apples, diced and peeled (best if you use a mix like Granny Smith and Gala)
1 ½ teaspoons vanilla extract
Optional: vanilla ice cream and caramel sauce to serve
