A clean eating paella and rice recipe with chicken thighs, shrimp, mussels, and turkey sausage links. It is full of vegetables and flavor.

3 tbsp olive oil divided
4 chicken thighs boneless & skinless
salt & pepper to taste
1 1/2 tsp oregano dried
14 ounce turkey sausage link pre-cooked, sliced into 1/2\" rounds
1 sweet onion sliced
2 red bell peppers sliced
3 Garlic Cloves chopped
1/2 tsp smoked paprika
1 sprig fresh rosemary chopped
15 ounces Diced Tomatoes 15 ounce can Diced Tomatoes
2 cups short grain brown rice
5 cups chicken broth might need more
1 large pinch saffron
1 cup frozen peas
8 shrimp
8 mussels scrubbed
