When it gets hot down here in Texas, you don’t really feel like spending anytime in the kitchen (except to get a glass of sweet tea). So this chopped salad is the perfect dinner for a hot, summer day!

Bag of Lettuce – any type you like
1-2 Tomatoes chopped
1-2 Avocadoes, sliced or chopped
1 Cucumber, sliced
Sliced strawberries –as much as you like
Hard boiled egg sliced
Blue Cheese crumbles
Nuts – sunflowers, almonds, pecans
Grilled chicken (I used the already cooked fajita chicken in the refrigerator section you could also use rotisserie chicken)
Good Seasons Italian Dressing (follow directions on packet)
1-2 Tomatoes chopped
1-2 Avocadoes, sliced or chopped
1 Cucumber, sliced
Sliced strawberries –as much as you like
Hard boiled egg sliced
Blue Cheese crumbles

Make dressing a few hours before and chill in refrig.
Place as much lettuce as you like on plates
