This Coconut Cream Cake is probably one of the best cakes I have ever made. The coconut cream cheese frosting itself is so rich and moist and with coconut flakes on top gives you an out of the world experience. This is definitely is a coconut lover's cake and the best part its so light. There is no butter used in the cake recipe, but the cake get its moistness from the coconut milk used.

All purpose flour - 1 3/4 cup
Coconut flour - 1/4 cup
Eggs - 4 no:s
Sugar - 1 1/2 cup
Coconut milk - 1/2 cup
Baking powder - 2 teaspoon
Pure vanilla extract - 1/2 teaspoon
For the frosting
Cream cheese - 8 ounce package of melted cream cheese
Coconut flour - 3 1/2 cups
Butter - 3 tablespoon
Pure vanilla extract - 1/2 teaspoon
Coconut extract - 1/2 teaspoon (optional)
Sweetened Coconut flakes - 1/2 cup
Coconut flour - 1/4 cup
Eggs - 4 no:s
Sugar - 1 1/2 cup
Coconut milk - 1/2 cup

For the frosting
Cream cheese - 8 ounce package of melted cream cheese

2. Mix the yolk and sugar gradually till well mixed.
3. Now mix the coconut milk and vanilla extract and mix well.
