Coronation Chicken

This is one of my all time favourite sandwich fillings. It stays perfect in the fridge all week long ready to fill your sandwiches and satisfy your late night snacking. Also great with salads and straight off the spoon!

5 tbsp Natural Yoghurt, 4tbsp Mayonnaise, 3 cloves Garlic , 1 medium white onion, 0.5tsp cumin, 1tsp mild curry powder, 0.5tsp garamasala, 1 tsp white sugar, juice of half a lime, mint leaves, chives, 3 plums, salt

2 large skinless chicken breast
First slice the chicken into small pieces and fry in a little oil on a medium heat until cooked. Set aside in a bowl and allow to cool For the sauce. Place the natural yoghurt and mayonnaise in a large glass bowl. Low fat or full fat, both taste great. Add the finely chopped garlic cloves and grated onion. Add the finely chopped plums and juice of half a lime. Add the cumin, curry powder, garamasala and sugar Scrunch some fresh mint leaves together until they roughly make the size of a thimble, finely chop and add to the bowl. Add 4 or so finely chopped chives along with a generous dash of salt and mix. When your chicken pieces have cooled add them to the bowl and stir them in. Cover with cling film and refrigerate for an hour before use. Super Easy, Super tasty!
