Cream of Kale Soup

Like Cream of Mushroom or a Potato Soup consistency. A yummy soup for a cold wintry day. Also great as a sauce over chicken. This is high in fiber. Gluten Free.

Kale
northern beans
onion
butter
Chicken broth
sour cream
shredded parmesan cheese and cheddar cheese
Drain 1 can of white beans. Place white beans and 1/2 cup chicken broth in blender or food processor. Puree until very smooth. Melt a tablespoon of butter in a skillet. Saute diced onion and garlic. Add puree of beans and broth. Add more broth to the consistency you prefer. Add shredded cheese, salt and pepper to taste. Add fresh or frozen kale. Cover with lid and let simmer for about 20 minutes. Serve.
