Creamy Chicken Penne

Creamy, comforting Penne' pasta dish - simple and delicious, and you only use 2 pans!

1 box Penne' pasta (may us whole wheat or whole grain)
2 Tbsp butter
1/2 Tbsp extra-virgin olive oil
1/2 cup grated Parmesan cheese
1/2 milk
1 can cream of chicken soup (may use low fat/low sodium)
dash Italian seasoning
dash freshly ground black pepper
1 can (8oz) canned white meat chicken
Prepare pasta according to package directions. In 2-quart saucepan, melt together butter and olive oil. Add grated cheese and whisk together. When cheese is incorporated into butter/oil mix, add milk, soup and seasonings. Stir together until hot and slightly thickened then add chicken and cook one-two minutes more on low heat until chicken is warm. Toss with drained pasta, garnish with a sprinkle of Parmesan cheese and a dash of ground pepper. Enjoy!
