Creamy Citrus Black Bean Soup

Comfort food at its finest, Creamy Citrus Black Bean Soup is delicious and easy to make. Perfect for a one pot weeknight dinner, it also would be great as a starter for a Mexican themed dinner or Cinco de Mayo!

1 cup chopped carrots
1 cup chopped onions
2 cups chopped peppers (mix of red, yellow, and green peppers)
2 tablespoons olive oil for sautéing
1 1/2 teaspoons cumin seed
1 teaspoon chili powder (I used chipotle chili powder)
10 oz can Rotel Tomatoes
4 15.5 oz cans black beans, rinsed
8 cups chicken broth
1 1/2 tablespoons lemon juice
1 tablespoon lime juice
2 tablespoons orange juice
1 cup sour cream
Salt and pepper to taste
Toppings (optional): extra sour cream, chopped cilantro, extra lime quarters, grated cheddar cheese
