This butternut squash soup recipe is dreamy. It's rich and creamy, vegan, and full of fall flavors! It's topped off with spicy pepitas and fresh chives.

1 onion
6-7 cups butternut squash ( cubed )
1 tbsp. coconut oil
1/2 cup full fat coconut milk
1/2 cup pepitas
1 tsp. olive oil
1 tsp. smoked paprika
