Crock Pot Breakfast Burritos

When I realized it was my week to make a snack for our Sunday School class, I remembered a recipe for breakfast burritos that I’ve used a few times over the years. Because it’s all done in the crock pot, it’s so convenient for busy mornings. Or lazy ones :)

6-8 slices of bacon, uncooked, cut into pieces
1 pound breakfast sausage, cooked
1 bag O’Brien style hash browns (cube potatoes with peppers)
2 jalapenos, chopped
16 oz Velveeta cheese
12 eggs, beaten
Thoroughly grease crock pot (I sprayed mine with Pam) and layer ingredients as listed. Cook 8 hours on low. Serve with flour tortillas, sour cream and salsa.
