On Tuesday, I woke up & my face was cold. Sure, it’s pretty much winter now & we do keep our house a bit cooler at night, but since we have radiator heat, our room is quite warm in the mornings. 2 1/2 pounds russet potatoes, washed but not peeled, diced into 1/2 inch cubes
1/2 large yellow onion, diced
5 cloves of garlic, minced
4 cups chicken stock
8 oz cream cheese, softened
1 1/2 teaspoons salt
optional garnishes: crumbled bacon, shredded cheese, green onions or chives
