This Crockpot Pumpkin Oatmeal w/ Quinoa can be made in advanced, is super healthy, and tastes like pumpkin pie!

6 cups unsweetened almond milk
2 eggs
1 (15 oz) can pumpkin puree
? cup maple syrup
1 teaspoon salt
1 and ½ tablespoons cinnamon
½ teaspoon ginger
½ teaspoon nutmeg
½ teaspoon cloves
1 tablespoon vanilla
1 cup quinoa
1 cup steel cut oats (it has to be steel cut oats, or your oats will be too mushy)
Optional (but highly recommended) toppings:
Raisins
Pecans
Maple syrup or brown sugar
Spray crockpot with cooking spray. Spray it really, really well or else it will stick.
