Crockpot Shredded Mexican Chicken

Easy shredded chicken for tacos, burritos or quesadillas.

2 frozen chicken breasts
1 10 oz can of diced tomatoes
1 envelope of taco seasoning
1/4 cup of water
Place the frozen chicken in the bottom of the crockpot. In a bowl mix the diced tomatoes, taco seasoning and water. Pour the mixture over the chicken. Set the crockpot to low for 6 hours. After 6 hours take two forks and shred the chicken. The chicken should come apart easily. Once shredded stir back into the crockpot and cool for an additional 15-20 mins. If the mixture seems a little dry add 1/8 cup of water and stir to incorporate. You can leave the chicken in the crockpot on the warm setting until ready to serve.
