Crockpot Smoked Beef Sandwiches

This method doesn’t give as much smoked flavor as using a real smoker, but, nevertheless, it produces some awesome beef.

3-4 pounds beef brisket or comparable piece of meat
1-2 c. mesquite wood chips (depends on size of crockpot), soaked
1 T. smoked spice rub
2 c. water or beef broth
1/2 tsp. - 1 T. liquid smoke (depending on how smoky you like your meat)
