We love this salad because of how light and fresh it is. There’s nothing worse than being in the kitchen in the middle of the summer, cooking over a hot stove. This is made of all fresh ingredients and in no time you have a delicious summer salad that is perfect for any time of day!

2 Cucumbers peeled and diced into large chunks
2 Avocados diced
2½ cups chopped Cherry Tomatoes
3 Tablespoons minced Red Onion
4 oz cubed Feta Cheese
1 Tablespoon Balsamic Vinegar
2 Tablespoon Olive Oil
1 teaspoon Salt
1 teaspoon Pepper
