Fresh Herb and Potato Frittata Great for brunch or a light lunch as well as a hearty side dish !

10-12 medium red Potato's sliced thinly
2 cloves garlic minced
2 Tbsp. olive oil
12 eggs slightly beaten
3/4 Cup fresh basil chopped or 2 Tbsp. dry
3/4 Cup fresh Parsley chopped
1 Tbsp. fennel seed (Anise seed)
1/2 tsp. dry oregano
3/4 Cup parmesan cheese
4 oz. cream cheese room temperature
3/4 Cup milk
Chopped parsley and paprika for garnish (optional)
