Add spice to your date night in with these fiesta bowls. Easy to tailor to dietary needs and taste. My husband scoops his up with tortilla chips and since I can't have corn I eat mine with a fork. Can leave out the meat to make vegetarian.

1 15 oz can of black beans drained
1 chopped medium tomato
1/2 chopped onion
1 chopped bell pepper
1 lb cooked ground meat (I used venison)
salt and pepper to taste
1 tablespoon cumin
1 tablespoon chili powder
4 servings cooked rice
optional toppings: shredded cheese, salsa, chopped avocado

Cook the meat and add salt, pepper,cumin, and chili powder. Cook rest of ingredients for three minutes (I used tupperware stacked cooker in microwave. Layer rice, meat, and veggies in a bowl and then top with the optional toppings.
