I use a dryer aplliance but there are tutorials on the web to use the sun to dry your food.

Cut vegetables and put in large pot with some olive oil.
Cook as usual but avoiding salt, peper and water.
Dry in the machine 16 to 18 hours.
Mash in mixer and dry some 1 or 2 hour more.
Store in dry and dark place or in the fridge.
A liter of ratatuille turns 250 ml of dry food.
