This is a great brunch dish or weeknight dinner. You can make it in about 20 minutes, which is great for busy nights when you don’t feel like doing much cooking. During the summer, I use zucchini as my veggie of choice since it’s cheap and in season. I just grate two or three zucchinis and squeeze the moisture out. We usually eat it with a little hot sauce or salsa on top, and I serve muffins on the side.

1 package frozen chopped broccoli or chopped spinach, thawed and squeezed dry
1 tsp. salt
1/2 tsp. pepper
3/4 c. shredded cheddar cheese

Spray a large oven-safe skillet with nonstick cooking spray.
