East African Peanut Soup

This is one of my very favorite soup recipes. My sister Michele says, “It’s an adventure in every bite.” It’s a great potluck take-along. Everyone seems to love it!

1 medium onion, chopped
8 cups vegetable stock
1 teaspoon ground ginger
1 teaspoon cumin
1/2 teaspoon cinnamon
1/4 teaspoon cayenne pepper
1 large carrot, sliced on the diagonal
1 cup chopped tomatoes
1-1/2 cups corn kernels
2 cups red potatoes, cut into 1-inch cubes
1/3 cup creamy peanut butter
1/2 cup boiling water
4 cups chopped green cabbage
1 cup green beans, cut into 1-inch pieces
1 medium banana, peeled and sliced, as garnish
1 cup roasted peanuts, roughly chopped, as garnish

1. In a large pot over medium high heat, cook onion in 1/2 cup of the vegetable stock until softened, about 4 minutes. Stir in spices (ginger, cumin, cinnamon, and cayenne), and cook for 1 minute.
