This is an amazingly easy casserole. It mixes 2 of my favourite things, chicken and Mexican! It is super flavourful and nice and filling.
4 chicken breasts
2 teaspoons taco seasoning
2 bell peppers in assorted colors, deseeded and thinly sliced
1 red onion, peeled and thinly sliced
1-2 tablespoons olive oil
1/2 cup shredded Mexican cheese

Preheat oven to 375.
Lay the chicken breasts in a single layer in a greased glass baking dish.
Sprinkle the taco seasoning over the top of the chicken breasts.
