Easy Chicken Piccata with Capers

Italian dish made from chicken with a creamy sauce and capers. Adding lemon juice making the taste unique. For those who don't like using white wine for their chicken picccata this is for you, I used chicken stock. Enjoy this recipe in just 35 minutes.

4 pieces chicken breast fillet ( breast fillet )
2 tbsp Olive oil ( extra virgin )
1/4 cup plain flour
40 gram butter
2 eschalot ( thinly sliced )
2 cloves garlic ( crushed )
1 tbsp. thyme leaves ( plus extra to serve )
1 cup chicken stock ( salt-reduced )
1/4 cup lemon juice
300 ml light thickened cream ( for coking )
1 small lemon ( thinly sliced )
2 tbsp drained Baby Capers ( rinsed )
1 tbsp fresh chopped Parsley leaves ( flat-leaf )
salt and pepper
