This easy healthy breakfast casserole made with chorizo, sweet potatoes, and spinach is ideal for Cinco de Mayo, Mother's Day, or brinner.

1 red onion, cubed
1 sweet potato, shredded (leave skin on)
6 eggs
8 1/2 ounces egg whites
1 pound chorizo
3 cups fresh baby spinach
Queso fresca, crumbled (optional garnish)
