Easy Instant Pot Minestrone Soup

This Minestrone Soup can warm you up during this chilly weather. You would enjoy this healthy and nutritious dish up to the last bite. Loaded with vitamins from fresh vegetable and plant-based protein.

1 onion ( small, diced 1/3 cup )
2 cloves garlic ( minced )
1 carrots ( medium, about 1 cup chopped )
1 celery stalk ( large, chopped )
2 teaspoons dried basil
1 teaspoon dried oregano
3/4 teaspoon dried thyme
1 can diced tomatoes ( 32-oz )
3 tablespoon tomato paste
1 bay leaf
4 cups low sodium vegetable broth ( 32 ounce carton )
water ( add as much as needed to cover the vegetable )
1/4 cup uncooked small shell pasta ( use gluten free if necessary or leave out and add chopped potatoes or cauliflower )
(2/3 cups) zucchini ( medium, sliced into halves or quarters )
1/4 cup red kidney beans, canned or cooked ( drained and rinsed )
1 cup fresh baby spinach ( chopped )
1/4 cup cannellini beans, canned or cooked ( great northern beans, drained and rinsed )
1 teaspoon balsamic vinegar ( optional but adds great flavor )
parmesan cheese ( Shredded or grated, for serving )
fresh parsley ( finely chopped, for garnish )
