Easy Lasagna Soup

A family friendly, easy and quick soup with all the ingredients from your favorite pasta dish.

2 teaspoons olive oil
1 pound ground turkey
1 medium sized onion, chopped
3 garlic cloves, minced
2 teaspoons dried oregano
1/2 teaspoon crushed red pepper flakes
2 tablespoons tomato paste
1 (28 oz) can fire-roasted diced tomatoes
2 bay leaves
6 cups chicken broth
Parmesan rind, optional
8 ounces of broken up lasagna noodles or fusilli pasta
1/2 cup fresh basil leaves, finely chopped
salt and pepper to taste
For the Topping or the Cheesy Goodness:
8 ounces of low fat ricotta cheese
1/4 teaspoon salt
pinch of black pepper
1/2 cup mozzarella cheese
1 pound ground turkey
