Easy Minestrone Soup

A hearty (but light) vegtable soup that is perfect for cold nights!

2 medium carrots, chopped
1 small onion, chopped
2 garlic cloves, minced
3 teaspoons canola oil
5 1/2 cups water
4 beef bouillon cubes
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can green beans
1 can dark red kidney beans
2/3 cup cooked elbow macaroni or favorite pasta
Salt & Pepper to taste (be generous with both)
Italian Seasoning to taste
Shredded Italian Cheese (optional)
