Easy Potato Carrot Leek Soup

This is great with or without carrots. As soon as leeks are in season at our local grocery store we make this for lunches to bring to work. It's delicious, especially with a little bit of chopped red bell pepper.

1 Tsp. olive oil
1-2 large leeks, cleaned and chopped
3-4 carrots, pealed and chopped
2-3 medium sized potatoes, chopped
4 C veggie stock
1 vegetarian bouillon cube
Chopped red bell pepper (optional)
Sauté carrots, leeks and potatoes in a small amount of oil until the carrots begin to soften. Add potatoes, stock, and bouillon and heat to boiling Reduce heat, cover, and simmer until potatoes soften (~ 20 min) Put all cooked ingredients into food processor and process until smooth Sprinkle with red bell pepper if desired and serve! This recipe is quick, easy, and often makes use of random leftover veggies remaining in our fridge. This is a popular recipe in our family! My brother likes to add a splash of good balsamic vinegar before serving.
