Easy Rice Pilaf

I received this recipe from my mom years ago. I don't remember where she got it. It has become a family favorite side dish.

1/2 cup butter
1 large bell pepper
1 large onion
8 oz. mushrooms, sliced (fresh or canned)
1 cup rice, long grain
2 cups beef broth
dash of thyme
1/2 tsp salt

Pre-heat oven to 350 degrees
Slice pepper, onion, and mushrooms. Melt 1/4 cup of butter in oven proof skillet; add vegetables and cook until tender, 8-10 minutes. Remove vegetables from skillet. Add remaining 1/4 cup butter to skillet. Add rice (dry) and saute until lightly browned. Add beef broth, salt, thyme, and vegetables to skillet. Bring to boil. Cover skillet and put in oven. Bake 45-55 minutes until rice is cooked.
Tips:You can use brown rice for this recipe, too. If desired, 1/3 cup butter could be used instead of 1/2 cup.
