ZUCCHINI BREAD

1 1/2 Cups shredded zucchini

1/4 Cup Coconut Oil

1 1/2 Cups Plain Greek Yogurt

1 3/4 Cups Splenda

2 1/2 Cups Flour - sifted

1 Teaspoon Baking Powder

1 1/4 Teaspoon Baking Soda

1/4 Teaspoon Salt

1 Tablespoon Cinnamon

2 Teaspoons Nutmeg

1/2 Cup Chopped Pecans or Walnuts (optional)
