Einref's Pork Neck Bones With Cabbage and Potato

This is a savory dish and great for winter weather! I hope this recipe will make you love pork neck bones.

2 lbs. Pork Neck Bones
1 Small Cabbage
4 Medium Size Potatoes (Cut each potato in 4 cubes)
1 Whole Onion (Sliced Long Ways)
5 Small Jalapenos
1/8 tsp. Salt
1/8 tsp. Pepper
10-12 cups Water

10-12 cups Water
1. Wash the pork neck bones and put in a large pot.
2. Add 7 cups of water.
3. Boil for an hour uncovered on high heat.
4. Skim all the bubbles.
5. Add a cup or two of water whenever needed and continue to boil it.
6. Reduce heat to medium. Add the potatoes. Then water (only if needed) and bring to a boil for another 30 minutes.
7. Add the cabbage and onions and cook for ten minutes.
8. Season with salt and pepper. (Add a little bit more according to your taste.)
9. Simmer on low for 5 more minutes.
10. Serve hot and enjoy.
Note: Remember water is important in this recipe to make the meat on neck bones tender. Also, the amount of yummy juice you get in this recipe depends on the amount of water you use.
