1/2 tbsp Butter / Olive oil
1/2 Onion chopped
1 - 15 oz can pinto beans, drained & rinsed
1/2 tsp chili powder
Salt ( to taste )
1 cup Mexican cheese blend
1 cup Enchilada sauce
2 large Tortillas ( flour or corn - your choice )
For the rice:
3/4 cup Raw rice
1 Green chile / Serrano / Jalapeno chopped (if desired)
2 tbsp Cilantro chopped ( if desired )
1 tbsp Butter / Olive oil
2 tsp Lemon juice
