Everything But the Kitchen Sink Granola

This is what I call “everything but the kitchen sink granola.” I usually just toss in what ever I have on hand. My kids really love to have it over some Greek yogurt with some fresh fruit. I think it’s the perfect breakfast! You can also just eat it as a plain ol’ bowl of cereal – either way it’s delish!

4 cups old fashioned oats
1 c. nuts (I had pumpkin seeds this time around)
3/4 c unsweetened coconut flakes
1/2 tsp cinnamon
1/4 tsp. nutmeg
3 Tbsp. coconut oil
1 c. peanut butter (creamy or crunchy)
4 Tbsp. honey
1 tsp vanilla
1 c. nuts (I had pumpkin seeds this time around)
3/4 c unsweetened coconut flakes
1/2 tsp cinnamon
1/4 tsp. nutmeg
3 Tbsp. coconut oil
1 c. peanut butter (creamy or crunchy)
4 Tbsp. honey
1 tsp vanilla
Heat oven to 325.
In a large mixing bowl combine oats, nuts, coconut, cinnamon, and nutmeg. Give it a good stir.
In a microwave-safe bowl combine the coconut oil, PB, and honey. Heat 30 seconds at a time...
