Fast & Economical Granola

Store-bought granola is crazy-expensive, and this recipe is not. I am also allergic to nuts and could never find a store-bought brand that didn't have almonds in it....so I made my own and haven't looked back. You can make this quickly, you can double/triple it, you can add anything you like to it...very versatile. Our kids love it with yogurt or even on ice cream. Get creative!

3/4 cup brown sugar
1/3 cup vegetable oil
1/3 cup honey (liquid is best)
5 cups old fashioned oats (not instant)
1/2 cup dry milk powder
3/4 tsp cinnamon
pinch of salt

After cooking add: 1/2 cup raisins, 1/2 cup dried cranberries, whatever else you can dream up, such as nuts, wheat germ, coconut, dates, flax seed...the sky is the limit!
Preheat oven to 375. Mix brown sugar, honey and oil in a small saucepan. Heat until sugar is dissolved. Set aside. In a large baking dish or roasting pan, combine all dry ingredients EXCEPT raisins, cranberries and extras. Pour sugar mixture over dry and mix well with a fork. Bake for 10-12 mins, stirring once, until oats are slightly golden. Remove from oven, add in dried fruit and stir. Let cool in pan and store in airtight container.
