Fresh from the Garden Pesto
I keep a terracotta pot of sweet basil growing year round just so I can have this once a week. If you don't have fresh basil on hand, baby spinach makes a great substitute.

• ½ cup fresh basil or baby spinach
• ½ teaspoon minced garlic
• ¼ cup almonds
• ¼ cup peanut oil
• ¼ cup feta cheese
• ½ teaspoon minced garlic

• ¼ cup feta cheese
Combine all of the ingredients except the feta in a small food processor, process until ingredients are the consistency of a thick milkshake. Add feta and process until cheese is mixed in.
