The perfect frozen drink to have in the freezer for the summer - ready when you're ready to put your feet up out on the patios, and sip on a sweet concoction after a long day at work!

1 large can pineapple juice
1 can cream of coconut
1 pint vodka
lemon-lime soda
1 can cream of coconut
1 pint vodka

In a large container, blend together the juice, cream of coconut and vodka. Put this in a tightly covered container; freeze at least 24 hours (because of the alcohol, it never freezes firm, but you want it good and ‘slushy’ before you start using it).
Before serving, stir the mixture well, as the alcohol tends to settle to the bottom, and it will be very potent there if you forget to stir first! To serve, stir it up and fill an 8 ounce glass about ½ full; add lemon-lime soda almost to the top, and stir to blend. Sip and enjoy!
