Fruity cashew chicken pasta salad is loaded with fruit, cashew, tender chunked chicken, creamy dressing, and spiral pasta. Hearty enough for a main dish or a great side dish for dinner, potluck, or BBQ.

1 box (16 oz) spiral pasta (like rotini or fusilli)
1 rotisserie chicken, chunked (about 3 cups)
1 can (20 ounces) pineapple tidbits, drained (reserve juice)
1 cup sliced celery
1 cup thinly sliced green onions
1 cup seedless red grapes
1 cup seedless green grapes
2 cups cashew halves, salted or lightly salted
1 1/4 cups ranch salad dressing
1 cup mayonnaise
salt & pepper, to taste
3 tablespoons reserved pineapple juice
1 rotisserie chicken, chunked (about 3 cups)
1 can (20 ounces) pineapple tidbits, drained (reserve juice)
1 cup sliced celery
1 cup thinly sliced green onions
1 cup seedless red grapes
1 cup seedless green grapes
2 cups cashew halves, salted or lightly salted
1 1/4 cups ranch salad dressing
1 cup mayonnaise
salt & pepper, to taste
3 tablespoons reserved pineapple juice
Cook pasta according to package directions. Remember to salt the water so your pasta has some flavor. Drain and rinse with cold water.
In large mixing bowl, combine all the pasta salad ingredients.
