Funfetti Mug Cake with Raspberry Ice Cream Topping

An easy mug cake that is spot on in taste and texture to funfetti cake. Moist, sweet, and dairy free! Topped with a three ingredient homemade raspberry ice cream.

Mug Cake:
¼ cup all purpose flour
2-1/2 Tablespoons sugar
½ teaspoon baking powder
¼ cup Silk almond milk
1-1/2 Tablespoons oil (melted coconut or vegetable)
½ teaspoon vanilla extract
Raspberry Ice Cream:
¼ cup full fat coconut milk
3 Tablespoons raspberries (I used frozen)
1 Tablespoon powdered sugar
