Summer, summer, summer.. Gemista smells like the begging of summer. Literally one of my favorite dishes and in my opinion on of the five dishes that represent Greece!

6 tomatoes
6 green peppers
Rice
2 big onions or 3 medium
1 green onion
A bunch mint, only the leaves, washed
A bunch parsley, washed
1 chicken bouillon cube
2 teaspoons sweet paprika
40gr tomato paste
1 teaspoon sugar
Salt
Pepper
Olive oil
3 medium potatoes cut in wedges
I used 3 peppers and 9 tomatoes.

Wash your vegetables very well. It’s time to remove the tomatoes flesh.
Use a large bowl.
Cut the top of each tomato creating a lid. We don’t want a very thick slice, see the photo.
