Lately this is all I have been eating for lunch. I whip up a quick batch and eat about 2 servings (about 2 cups). It is so refreshing with the crisp cucumber, the juice tomatoes and the creamy cheese all lightly coated with vinegar and olive oil. My mouth is watering just talking about it. I love this salad so much even! Give it a try. You are bound to love it! {Serving Size = 1 Cup}

25 Grape Tomatoes, halved
1/2 English Cucumber, sliced
1/4 Red Onion, diced
1/3 cup Feta Cheese, crumbled
1 T. Red Wine Vinegar
1 T. Olive Oil
Salt & Pepper to taste

Cut tomatoes in half. Peel cucumber, cut in half and then into slices. Dice red onion.
