German Cucumber Salad

A creamy slightly sour, slightly sweet cucumber salad in the German tradition.

2 large cucumbers, peeled and sliced thin
1/2 medium onion, sliced thin
1 tsp. salt
1/2 cup sour cream
2 Tablespoons white sugar
2 Tablespoons white vinegar
2 tablespoons fresh dill, roughly chopped
Spread the sliced cucumbers and onions on a baking sheet or platter and season with salt. Allow to rest for 30 minutes. Pat dry or squeeze excess moisture if very wet from the cucmbers. Stir together the sour cream, sugar, vinegar and dill in a large bowl. Fold the cucumbers and onions into the sour cream mixture. Refrigerate 8 hrs or overnight for best flavor to develop before serving.
